duet of smoked salmon roulade (Scandinavia)
cold and hot smoked salmon, cream cheese, nori seaweed, red onion, baby capers, pickled cucumber, chives sour cream

slow cooked pork salad (Mexico)
marinated slow cooked pulled pork, cucumber, green bull horn peppers, corn kernels, red onion, carrot, red cabbage, avocado, coriander mayo dressing

orange scented beetroot arancini (Italy)
polenta crumbed, beetroot puree, orange juice and zest, french goats cheese log cream sauce, micro herbs

pan fried haloumi (Greece)
watermelon, coriander & mint salsa, chilli oil drizzle

baked atlantic salmon (Thailand)
thai green curry marinade, gingered coconut rice timbale, tamarind dressing, shallot, red chilli

harissa chicken tenderloins (Middle East)
grilled, harissa marinated, cauliflower cream sauce, mixed seed roasted japanese pumpkin chunks, sumac dusting

black angus beef rump strips (Australia)
seared, herb marinated, creamed leeks & desiree mash potato, red wine & spanish onion gravy
