20 Years of Rubyos – A VIP Reflection

As we celebrate 20 years of Rubyos, we want to take a moment to share our story — with you. This page is a special thank you for being part of our inner circle and for supporting us over the years. 

2005–2010: Humble Beginnings 

We opened our doors in 2005 with a simple but bold vision — to bring modern Australian flavours and a unique grazing-style menu to the heart of Newtown. It was a fresh concept back then, but it quickly found a loyal audience. From the start, Rubyos was about sharing — not just food, but experience. 

2011–2019: Growth, Creativity & Community 

These were our growth years. We evolved our menu, explored more global flavours, expanded our gluten free, vegetarian and vegan offerings, and curated a wine list to complement the creativity on our plates. We welcomed new team members, new regulars, and saw Rubyos become a true neighbourhood favourite — known not just for food, but for heartfelt hospitality. 

2020–2021: The COVID Chapter 

The pandemic brought one of the hardest chapters in our story. Like so many small restaurants, we faced lockdowns, empty dining rooms, and the unknown. But what got us through was the incredible support from guests like you. From takeaway orders to kind messages and ongoing loyalty, our Rubyos community kept us going — and gave us the strength to push forward. 

2022–2024: Renewal & Reconnection 

As the world opened up again, so did we. We reimagined parts of our menu, refreshed our cocktail bar, and embraced what we always knew to be true — food is better when it’s shared with good people. These past few years have been about reconnecting, re-energising, and rediscovering the joy of hosting.
